9 egg yolks, 310g sugar, water. Boil to 118 degrees and whisk

1020g double cream and 90g icing sugar. Whisk together.

Passion fruit puree to flavour.

Mix together and pour into tin to set. 30 mins to chill. 15-20 mins prep time.
